Ingredients

    1 pound lean ground beef
    1 medium onion, chopped (optional)
    1 teaspoon basil
    1 teaspoon oregano
    1 teaspoon salt
    1/8 teaspoon garlic powder
    1/2 teaspoon sugar
    2 cups canned, diced tomatoes
    1 6-ounce can tomato paste
    1 cup water
    8 lasagna noodles, uncooked (can use wheat, or vegetable lasagna if you can find them)
    1 egg, slightly beaten
    1 tbls. dried parsley flakes
    2 tbls. parmesan cheese, grated
    2 cups fat-free cottage cheese
    1/2 cup finely shredded mozzarella cheese

Directions

Brown beef and nonion. Drain well. Stir in seasonings, tomatoes, tomato paste, and water. Mixture may be used immediately, but for richer flavor, simmer uncovered for 15-20 minutes. Stir occasionally. Mix egg, parsley flakes, parmesan cheese, and cottage cheese.

In a 9X13 inch baking dish layer 1 cup of sauce, 4 dry noodles (break to fit) and half of the cottage cheese-egg mixture, spreading it evenly over the noodles. Repeat the sauce, noodles, and cottage cheese mixture. Top with remaining sauce. Cover and bake in a 350 degree oven for 50-60 minutes, or until noodles are tender. Let stand 10 minutes. Sprinkle with cheese and serve. Makes 12 servings

    I thought I would miss the 2 cups of gooey mozzarella that I usually use to make lasagna but this was great with only 1/2 cup. This will be the lasagna recipe I will use from now on! - 9/23/09

    I love this Lasagna I have made it three times for my husband and he loves it!! You forget it is good for you. I make a little more sauce then it asks for because you will run out on the last layer. - 9/29/08
