Barley & Wild Rice Pilaf

Ingredients
Olive Oil, 1 1tsp (remove)Onions, raw, 1 cup, chopped Barley, pearled, raw, 1 cup Garlic, 2 cloves Water, tap, 4 cup (8 fl oz) Salt, 1 tsp Peppers, sweet, red, raw, sliced, 0.5 cup Mushrooms, fresh, 1 cup, pieces or slices Garlic, 3 cloves Spinach, fresh, 4 cup
Directions
Heat 2 tsp of oil in large sauce over low heat. Add onion saute until golden brown about 5 minutes. Add barley, wild rice, and minced garlic stir one minute. Add 4 cups water and salt bring to a boil. Reduce heat to low cover and cook until grains are tender and liquid is absorbed about 1 hour. Heat remaning 2 tsp oil in a large skillet over med-low heat. Add red bell pepper saute until beginning to brown about 5 minutes. Add sliced mushrooms and 2 sliced garlic cloves. Stir and cook about 5 minutes. Add spinach and stir just until wilted about 2 minutes. Combine vegatable mixture with barley mixture and serve hot.
