Minestrone Soup w/Italian Chicken Sausage

1 lb sweet Italian chicken sausage2 cloves garlic, minced1 onion, chopped2 ribs celery, chopped1 carrot, chopped1 can (16oz) reduced sodium vegetable broth1 can (6oz) tomato paste1 can (14.5oz) kidney beans, rinsed and drained1 can (15oz) no salt added corn1/2 cup green beans3 Tbsp pearl barley1 cup whole wheat pasta elbowsshredded parmesan cheese, optional
1. Cut sausage into bite size pieces. Heat large skillet over medium heat. Add sausage, garlic, onion, and celery and cook, stirring occasionally, 10 minutes or until vegetables are softened and sausage is no longer pink. Remove from pan, draining off as much fat as possible, and place sausage mixture in 4-6 qt crock pot.
2. Add carrot, broth, tomato paste, beans, corn (well drained), green beans, barley, and 4 cups water to cooker. Add salt and black pepper to taste.
3. Cover and cook on high 2 to 3 hours or on low 4 to 6 hours. Prepare pasta according to package instructions and drain. Stir pasta during last half hour of cook time. Serve soup sprinkled with Parmesan cheese, if desired.
