BROCCOLI ASPARAGAS FRITTATA

Ingredients
7 LARGE or 9 MED EGGS4 oz. fat free half and half2 oz. shredded cheddar 1 Tb, grated parmesan1 Tb. Olive Oil1 Tb. Butter1 Cup minced fresh broccoli1/2 C. Mushrooms1 Cup diced fresh asparagus into bit sized pieces1 Large ShallotSalt and pepper
Directions
Warm broiler. On cooktop, saute shallots in olive oil and butter in broil safe pan, like a cast iron skillet. Toss in broccoli, mushrooms and asparagas. Saute till tender but not soft, 5 minutes on medium fire. Season to taste. Mix eggs with half and half. When vegetables are done, add egg mixture. Season again if you wish. Place cover over pan and let cook for 5-8 minutes over medium heat or until set. Add cheddar and finally top with parmesan. Take lid off and place under broiler to melt and brown slightly the cheese. This step depending on your broiler should not take more than a couple of minutes, Watch closely to not burn. Slice into four quarters and serve hot.
