* Apples, fresh, 4 cup, chopped * Regular Oats , 1 cup, dry * *Earth Balance Natural Buttery Spread, 8 tbsp * **Flax Seed Meal (ground flax), 3 tbsp * Walnuts, .75 cup, chopped * Flour, whole grain, .25 cup * Brown Sugar, .5 cup, packed * Cinnamon, ground, 2 tbsp * *Lemon Juice, 1 wedge yields
cup up apples. toss with 1/4 cup brown sugar and 1T flour. add cinnamon, cloves, ginger, nutmeg, etc. to taste. add lemon juice to brighten the flavor of off-season or dull fruits. very sweet fruits could require less sugar.
Mix oats, earth balance, remaining 1/4 c brown sugar, flax meal, walnuts, and more spices if desired with fingers until buttery spread is distributed evenly throughout.
put apples in 8" square pan; sprinkle oat mixture on top. bake for 35-45 minutes at 350, or until apples are bubbly and topping is crispy and starting to brown.
delicious on its own, or serve with vanilla ice cream, whipped topping, etc.
