Banana Nut Pancakes

Ingredients
1 cup flour1 3/4 tsp baking powder1/2 tsp salt1 Tbsp Baking Spenda (or sugar)2 large ripe bananas3/4 cup soy milk (or regular milk)1 cup Egg Beaters (or 2 large eggs)2 tsp canola oil (or any vegetable oil)1/2 cup chopped pecans (optional)
Directions
In large mixing bowl, mix together flour, baking powder, salt & sugar. Set aside.

In food processor with metal blade, puree bananas till a liquid consistency. Transfer to a bowl. Add milk, eggs and oil. Beat at low speed with mixer. for 30 seconds. Add dry ingredients, mix till batter is consistent- just a few seconds. Add pecans.

Spray electric griddle with cooking spray. Heat to 300 degrees. Pour pancakes till about 4". When batter has a good layer of bubbles, turn. Cook 2 more minutes. Serve warm.
