Microwaved Mahi Mahi

Ingredients
Mahi Mahi Treasures from the sea, 8 oz Olive oil Vigo, 2 tbspGarlic, 2 tsp Pepper, red flakes 1 tsp or your tasteThyme, ground, 1 tsp Lime Juice, 1 fl oz or your tastePepper, black to your tasteSea salt coarse Alessi to your tasteSpray glass or microwaveable dish with Pam or similar. Rinse fish, pat dry & set aside. In bottom of pan, mix olive oil, salt, pepper, red pepper flakes, thyme & smashed garlic cloves. Drop in Mahi Mahi & coat both sides liberally. Refrigerate for at least a 1 hr & then turn over once. Continue to let fish marinade for up to 4 hrs. Microwave on high 3 to 4 minutes or fish flakes easily.
