Chicken MaiFun Salad

Ingredients
0.5 pkg Dynasty MaiFun Rice Sticks6 oz. cooked boneless, skinless chicken breast, shredded3 chopped scallions3 Tbsp. chopped cilantro3 Tbsp. rice vinegar2 tsp. dark sesame oil
Directions
Soak rice noodles in water according to package directions to soften. Drain noodles, chop coarsely, place in large bowl with all other ingredients except chicken and toss to combine. To serve, divide mixture between two salad bowls or plates. Lay equal amounts of chicken on top of each salad. Serve immediately. Makes two medium sized salads.
