2 pounds boneless skinless chicken breast1 pound uncooked white long grain rice1 pound bag frozen peas and carrots2 10.5oz cans 98% fat free Cream of Chicken soupSeasoning to taste, optional
Boil chicken breasts in a 2-3 quart sauce pan until shreddable. Shred to bite-size chunks by pulling it with forks. Add more water if needed to create the 1:2 ratio for uncooked rice to water. Add rice and bring to boil. Cover and simmer on low heat for 20 minutes. Water should be absorbed by the rice when done. Add bag of peas and carrots. Add 2 cans of soup. Mix well with wooden spoon or other spoon that does not bend easily.
