Roasted Root Vegetables

Ingredients
1 C carrot slices.5 large onion - diced1 medium parsnip - sliced2 C small red potatoes cut into small wedges1 tsp canola oil.5 C chicken broth (or vegetable broth)
Directions
Pour chicken broth into baking pan
Add veggies
Drizzle oil over veggies
Cook for 40 minutes or until done
