Stuffed Jalapenos (cook this not that recipe)

Ingredients
4 oz fresh Mexican-style chorizo, casings removed1/2 cup shredded monterey jack cheese1/2 cup whipped cream cheeseSalt and black pepper to taste12 jalapeno peppers 1 cup cremini or button mushrooms, diced (not in calculation)1/2 onion, minced (not in calculation)
Directions
Slice peppers in half, scoop out seeds etc; mix together cheeses and chorizo, stuff pepper halves with 1/2 spoonful of mixture

bake, 400F for 15 mins

1/2 onion and 1 cup cremini or button mushrooms diced, optional.

    you might want to mention that the chorizo needs to be cooked and drained and the onion also needs to be sautéed first before mixing with mushrooms and cream cheese. - 9/28/14

    This sounds great! I stuffed our fresh ones this summer with just plain old soft mozzarela - also yummy, but will need to try this one next year when the peppers come ripe again. Thanks - 2/3/11
