Fluffy Tapioca

Ingredients
3 Tbsp Minute Tapioca3 Tbsp Sugar (divided)1/8 tsp salt2 cups skim milk 1 egg (separated) 1 tsp vanilla
Directions
Mix tapioca, salt, 2 Tbsp sugar, milk, and egg yollk. Let stand 5 min.

Beat egg whites until foamy; gradually beat in 1 Tbsp sugar, beating to soft peaks. Set aside.

Cook tapioca mixture over medium heat to a full boil, stirring constantly (about 6-8 minutes) Gradually add to beaten egg whites, stirring quickly just until blended. Stir in vanilla. Coole 20 minutes. Stir. Serve warm or chilled. Makes five 1/2 cup servings.
