Luscious Lemon Pie

Ingredients
Graham Crackers, Low Fat, 3 serving (6 whole sheets)Brummel & Brown, Original Spread made with Yogurt, 1 Tbsp1 small box Jello Mix Sugar Free, LemonWater, boiling .5 cup1 small box, Jell-O Vanilla Instant Pudding Mix, Sugar FreeDannon Light n Fit Lemon, 16 oz (divided into 8oz and 8oz)*8th Continent Light Vanilla Soy Milk, 1 cupDannon Light & Fit, Vanilla, nonfat, 1 cup
Directions
Preheat oven to 350, spray 9" pie plate

Process crackers till finely crumbled

add margarine, process till moistened

press into pan

bake till browned 6-8min, cool on rack

in small bowl combine gelatin mix and water stir until the gelatin is completely dissolved, about 2 min, set aside to cool slightly

in a large bowl with an electric mixer at med speed, beat together pudding mix, 1 cup of lemon yogurt, milk and plain yogurt. add the gelatin mix and stir until thoroughly combined

pour into cooled crust, refrigerate covered until firm, at least 8 hours

cut into 8 wedges, top each wedge with 2 tablespoons of the remaining lemon yogurt
