Egg Frittata

Ingredients
3 Cups of egg whites (you can buy these in a pourable carton for convenience)1 C. 2% mozerella cheese (or whatever cheese you like, can use fat free)4 servings of canadian bacon (chopped into small pieces)1C. broccoli (chopped into small pieces)1C. red pepper (chopped into small pieces)1/2 C. chopped onion (I like to use green onion)dash of Lawry's Low Sodium Season Salt (optional)pepper (optional)
Directions
In an 8 inch cast iron skillet, makes 8 servings. Pre-heat oven to 350 degrees. Spray a cast iron skillet or muffin pan well with cooking spray. Spread all ingredients except egg whites in bottom of cooking vessel. Sprinkle with seasoning if you wish. Pour egg whites over the top. Bake for 25-30 minutes or until firm.
You can change out the canadian bacon for turkey sausage links, and vary your veggies. Of course, this changes the nutrition content, but you get the idea for a healthy egg dish.
