Red Potato & Tomato Salad

Ingredients
1 Lb Red Potatoes quartered2 cups Cherry Tomatoes halved3 Scallions1/3 cup sliced pitted black olives2 tsps drained/rinsed capers1/3 cup chopped flat leaf parssey1 tbsp chopped thyme1/4 cup olive oil1 large lemon zested
Directions
Cook potatoes until fork tender. Drain in colander allow to dry about 5 minutes. Place warm potatoes in a bowl, add halved cherry tomatoes, sliced olives, capers, parsley, thyme,olive oil and lemon zest . Toss to coat. Season with salt and pepper. Refrigerate for 1 hours before serving.
