Dorothy's Cabbage and Bean Soup

Ingredients
1 Bag sauerkraut1/2 small head of cabbage cut small pieces2 cans kidney beans- drained1 firm apple - chopped2 cups (or more) water2 cups vegetable stock (beef or chicken stock if not going meatless)
Directions
Combine all ingredients in a slow cooker set to high.
Cook for about 5-6 hours.
(not included in the ingredients - cause I forgot to do it) Dorothy says to make a rue - melt a tablespoon of butter add a little flour and stir and cook until it begins browning and add to the soup to thicken - but mine was fine w/out thickening.
makes about 12 1-cup servings.
