Black Bean, Corn, and Spinach Omelette

-3 medium eggs-1/2 cup fresh spinach-2 T black bean & corn salsa-1/3 cup Veggie shreds (vegan shredded "cheese")-2 T Tuscan Italian dressing
-Whisk eggs with a dash of milk (I use almond milk).
-Pour egg mixture into frying pan sprayed with Pam.
-Add spinach to mixture.
-Add salsa on top of spinach, spreading flat (so that it will be heated evenly).
-Add veggie shreds "cheese."
-Once egg looks mainly cooked, fold omelette in half and cook a little longer.
-While cooking, top with the dressing.
-Remove from frying pan and enjoy!
