Kelley's 3-Egg White Omlet

Ingredients
3 large egg whites1 tbsp. heavy cream1/4 tsp. dried basil1/4 cup chopped, fresh spinach1/4 cup chopped, fresh mushrooms1/4 cup lowfat cheddar cheesesalt & pepper to taste
Directions
Separate 3-large eggs - (keep the yolks refrigerated for another recipe) - beat, and then fold in the heavy cream. Add the spinach, basil, mushrooms, salt and pepper. Spray a skillet with non-stick spray; turn heat to medium-low. Pour in the egg mixture, cover, and cook approx. 3 minutes. Flip over, cook another 3 minutes; add cheese to top and remove from heat and cover, let stand 1 minute. Serves one.
