Pork and Pears with Lemon-Vodka Sauce LC QPrep time: 5 minutes Cook time: 12 minutes4 boneless pork chops2 tablespoons olive oil, divided coarse salt and freshly ground pepper, to taste2 Anjou pears , peeled, cored and halved1/2 cup vodka2 tablespoons lemon juice
[1] Heat half of the oil in a large skillet over medium heat. Sprinkle the pork chops with salt and pepper. Add the chops to skillet; sauté 3 minutes on each side or until pork is done. If you have to work in batches, add a little more oil before the second addition.
[2] Remove pork from pan, and cover with foil to keep warm. Heat the remaining oil in the pan over medium heat. Place pear halves in pan, cut sides down and sauté 2 minutes on each side or until golden.
[3] Remove pears from pan, and keep warm. Stir in the vodka, scraping the pan to loosen browned bits. Sprinkle with salt and pepper, zest and juice of the lemon and cook for 1 minute. Serve the pork with the pears on the side. Drizzle the sauce over top to serve.
Note: You can sub chicken broth for vodka, if desired.
