Spicy Curried Lentils

1 Tbsp Olive Oil1/2 cup chopped onion1/2 cup chopped carrot3 cloves Garlic, minced 1 tsp Curry Powder1 tsp Ground Coriander1/4 tsp Ginger1/8 tsp Cayenne Pepper1/2 tsp Salt1 cup Dry Lentils2 cups Vegetable Broth
Heat Olive Oil in a medium saucepan over medium heat, add onion and carrot and saute until onion is translucent. Add Garlic and saute 3 minutes. Add spices and saute for 2 minutes. Add Vegetable Broth to the saucepan and stir in Lentils. Turn the heat up to high and bring to a boil. Once the mixture has come to a boil, reduce heat and simmer for approximately 45 minutes or until the lentils are soft and most of the liquid has been absorbed.
