Chicken Quesadillas

Ingredients
1 medium onion1 cup sliced bell peppers1 large boneless chicken breast 4 Tbsp Philadelphia 1/3 Less Fat Cream Cheese (1 per quesadilla) 2 tbsp Frank's Red Hot Buffalo Sauce4 La Tortilla Factory Whole Wehat Low Carb Tortillas
Directions
In a fry pan, sautee onions and bell peppers usuing nonfat cooking spary (Pam). Salt and Pepper; cook until soft, move to bowl.
Move chicken to fry pan; dash with Buffalo sauce, add red pepper flakes if you like it REALLY hot. Cook thouroughly.

Time to assemble:

Spread 1 tbsp of cream cheese on each tortilla, divide ingredients amount the 4 tortillas, fold.
1 by 1, place folded quesadilla in skillet, cook until brown, flip.
I like to keep them warm in oven until all are complete.

Makes 2 servings (2 quesadillas each); serve with salsa and/or guacamole/light sour cream.
