Soy-Ginger Soup with Chicken

1 lb boneless, skinless chicken thighs, cut into 1" pieces1 c coarsely shredded carrots2 TBS dry sherry (optional; adds no points to each serving)1 TBS soy sauce1 TBS rice vinegar1 tsp grated fresh ginger OR 1/2 tsp ground ginger1/4 tsp black pepper3 (14.5 oz) cans reduced-sodium chicken broth1 c water1 (6 oz) package frozen snow pea pods, thawedSoy sauce, for serving
Combine chicken, carrots, sherry (if using), 1 TBS soy sauce, vinegar, ginger, and pepper in a 3.5 to 6 qt slow cooker. Stir in chicken broth and water.
Cover; cook on HIGH for 2 to 3 hours. Stir in pea pods. Cover and cook for 3-5 minutes more.
To serve, ladle soup into bowls and serve with additional soy sauce.
Serve with brown rice or soba noodles.
