Sausage and Kale Soup

Ingredients
2 Smoked Sausage (I use choriso)1 med. onion, chopped1 sm can tomato paste (with garlic)1 bunch (8 cups) Kale4 potatoes chopped1 500ml can black beans, rinsed & drained2 tetrapacks reduced sodium chicken brothwater (about 8 cups)
Directions
Chop sausage into bite sized pieces. Saute in large stock pot. Add chopped onion, cook until softened. Meanwhile wash kale, seperate the leaves from the stems. Chop stems and add to pot. While the sausage, onion and kale stems are cooking, chop kale leaves and potatoes. When onion and stems are softened add the tomato paste, cook for a few seconds, then add the kale leaves. Mix well. Add the chicken broth. Bring to a boil, reduce heat to a simmer and then add the potatoes. Once potatoes are cooked add the beans and water to make approximately 24 cups.
