Low Carb Mushroom Soup

Ingredients

1 Cup Water1 Pound mushrooms, cleaned and sliced1 tablespoon olive oil1/4 cup heavy cream1/4 cup grated parmesan cheesedash of black pepper
Bring water to a boil in a saute' pan, add mushrooms, and boil slowly 4 to 5 minutes. Drain and pruee in a blender, adding olive oil and cream. Empty into a bowl and stir in cheese and pepper to taste.

Not bad. Definitely thick. I used vegetable broth instead of water to cook the mushrooms, and didn't drain all of the broth--I shouldn't have drained any of it, it was so thick. Good flavor overall. I used four kinds of mushrooms. Warning: These are four SMALL servings. More like two servings. - 1/2/08
