High Fibre Zucchini Muffins

Ingredients
1 C Flaxseed ground1 C Whole wheat flour1 C Spelt Bran1 C Dark brown sugar2 Tbsp Cinnamon2 tsp. Baking Soda1 tsp. Baking Powder1/2 tsp Salt2 C. Shredded Zucchini1 C. raisins3 Egg whites, 1 yolk3/4 C skim milk
Directions
Mix dry ingredients in large bowl. Add shredded zucchini, raisins. Mix well. Stir together milk, egg whites and one yolk. Add to batter, stirring until well moistened. Using a silicone muffin pan (cupcake liners will stick), Each muffin uses just under 1/4 C. of batter. Bake at 350F for 30 minutes or until tops bounce back when pressed. Makes 24 small muffins.
