Joan's Banana Muffins

Ingredients
1 cup white sugar1/2 cup canola oil2 eggs3 bananas, ripe and black (if small use 4)3 tbsp reduced fat sour cream1 tsp baking soda2 cups wheat flour
Directions
Turn oven to 375 F

With electric beater, mix sugar and oil

Add eggs, bananas (if frozen, defrost first)

In a small bowl, dissolve soda into sour cream

Turn mixer to low speed, and slowly add sour cream/soda to wet ingrediants

Sift in flour and continue to mix gently until blended

Spray 12 muffin tins and fill evenly

Bake approx 15-20 minutes until tooth pick inserted into centre comes out clean
