Chorizo Black Bean Chili

1 lb chorizo (I used hot)1 Tbsp olive oil1/2 cup red bell pepper, diced2 cans black beans, drained & rinsed2 cans Rotel tomatoes1 (12-oz) bottle Guiness Extra Stout2 cloves garlic1 Tbsp chili powder1 tsp cumin1 tsp oregano1/4 tsp ground red pepper
Heat olive oil in a dutch oven. Add chorizo and peppers; cook until peppers are tender. Add rest of ingredients. Bring to a boil. Reduce to a simmer and cook for 20-30 min or until desired consistency. Makes 6 1-cup servings. I serve over pasta (not included in calories).

This was a really tasty dish. One of my concerns here is that your ingredients shows Guiness in the calories but Guiness was not in the instructions and I didn't use Guiness, so I'll have to figure out my own calories for Sparkpeople. - 1/8/11

Sorry about that. I do make this chili with the Guiness. However, I am sure it is tasty without and better for you!
