Paula's Pepper Steak Stirfry w/ Rice

Ingredients
2 pkts. Tyson Seasoned Beef Strips (12 oz total)2 cups Minute Ready To Serve brown rice2 eggs, beaten1 cup bell peppers, chopped into bite-size pieces6 baby carrots, chopped into bite-size pieces4 Tbsp Kikkoman Lite Soy Saucedash of ground gingerdash of pepperdash of garlic powder2 tsp Extra Virgin Olive Oil
Directions
Heat olive oil in skillet or wok over medium high heat.
Scramble eggs & cook in skillet.
Add beef and carrots, stir well. Cover for 3-4 mins to let the carrots soften a bit.
Add remaining ingredients, stirfry for 3-5 minutes until rice is heated through and peppers are crisp-tender.

    I wanted to but I just threw it together with what I had on hand & I was out of onions!! Next time I definitely will add onions!
