Chicken Cordon Bleu

Ingredients
4 boneless, skinless chicken breast halves4 slices cooked ham6 slices Swiss cheese1/4 tsp. salt1/8 tsp. ground pepper1/2 cup Seasoned bread crumbs
Directions
1) Preheat your oven to 375 degrees Fahrenheit and lightly grease a 7x11in. baking dish with cooking spray.

2) Pound each of the chicken breasts to about 1/4 an inch.

3) Lay out each of the chicken breasts out and season both sides with the salt and pepper, then layer one slice of ham and one slice of cheese on them.

4) Roll the chicken breasts up so that the ham and cheese are on the inside, then secure with a toothpick. Put the bundles in the pan and bake at 350 degrees for 30-35 minutes, or until the chicken is no longer pink.

5) After the chicken finishes, layer the remaining slices of cheese on the chicken breasts, then bake for 5 more minutes. Remove the toothpicks and serve.

    My husband and I love making this (though we kind of hate having to beat the chicken into 1/4" thickness - mainly b/c we almost wind up butchering it)! I'm not crazy about Swiss cheese those so when I make this I always substitute the Swiss for Mozerellla...and it's oh so good!!! - 2/2/11
