Nacho Potato Soup

1 pkg. (5 ¼ oz.) au gratin potatoes1 can whole kernel corn, drained10 oz. can diced tomatoes and green chilies, undrained2 cups water 2 cups milk2 cups Velveeta cheese, cubedDash of hot pepper sauce (opt.)Parsley (opt.)
In a 3 quart saucepan, combine potatoes and sauce mix, corn, tomatoes, and water; mix well. Bring to a boil. Reduce heat, cover, and simmer 15-18 minutes or until potatoes are tender. Add milk, cheese, and pepper sauce (if desired). Cook and stir until cheese is melted. Makes 2 qt. (8 servings).
