2-3 pounds potatoes (any kind), cut up into 1” pieces1-2 bags of frozen vegetables1 onion, chopped2 cans tomato sauce1 can diced tomatoes 1 teaspoon pepper1-2 cloves garlic½ - 1 teaspoon oregano½ - 1 teaspoon crushed red pepper (opt.)Water
Put all ingredients into crockpot, fill with water to the top of the veggies. Best if prepared the night before. Cook in crockpot all day, typically 8-10 hours to make sure potatoes are soft.
