Nummy creamy lite coconut milk sauce

Ingredients
Sesame Oil 1 tspGinger Powder (or fresh if you have it) 1.5 tspGarlic 4 clovesCurry Powder 1 tspCumin 1 tspSriracha Chili Garlic sauce 1 tsp (more if you like it hot)Soy Sauce low sodium 6 tbspBrown Sugar 1 tbspTrader Joe's Lite Coconut Milk 3 servings=1 cup
Directions
Heat 1 teaspoon of sesame oil in a large nonstick skillet over medium heat. Add ginger and garlic; cook 1 minute. Stir in curry powder, chili garlic paste, and cumin; cook 1 minute. Add soy sauce, brown sugar, , and coconut milk; bring to a simmer (do not boil). Remove from heat.

This sauce gets better when it sits for awhile, and has time to thicken up.

I usually make this with Tilapia and cauliflower, and pour it over both.

Serves 4 @ about 1/4 cup per serving
