Greek-Style Chickpea Salad

2 (15-ounce) cans chickpeas, rinsed1/2 small red onion, minced1/2 large cucumber, peeled, halved length-wise, seeded1/4 cup minced fresh mint1/4 cup crumbled feta cheese1 T minced fresh parsley3 T fresh lemon juice2 T minced pitted Kalamata olives1 T Dijon mustard1 T extra-virgin olive oil1 small garlic clove, mincedsalt and pepper to taste (not included in ingredient calculation)
Toss the chickpeas, onion, cucumber, mint, feta, and parsley together in a large bowl.
In a separate bowl, whisk the lemon juice, olives, mustard, oil, and garlic together, then pour over the chickpea mixture and toss to coat.
Season with salt and pepper to taste and serve.
Makes approximately 8-9, 1/2 cup servings.
