Lazy Baked Greek Chicken

Ingredients
1 chicken breast1/2 box frozen chopped spinach, thawedsalt and pepperfreshly grated nutmeg, to taste1 Tbsp butter1/2 cup panko breadcrumbs1/2 Tbsp oreagno1/4 cup crumbled feta cheese
Directions
Preheat oven to 425. Season spinach with salt, pepper and nutmeg. Melt the butter in the pan, turn off the heat and add panko, oregano and toss

Spray a baking dish with olive oil spray. Split chicken breast across (but not all the way through) and open like a book. Stuff the spinach and feta, letting the stuffing overflow at the edges. Place the chicken in the baking dish and top with breadcrumbs. Bake until the juices run clear, about 20 minutes.
