Corn Bread

Ingredients
1 cup all purpose flour1/2 tsp baking soda1 1/2 tsp baking powder1 tbsp sugar1 tsp salt3/4 cup yellow cornmeal1 1/2 cups buttermilk2 eggs3 tbsp vegetable oil1/2 cup red peppers, finely diced1/4 cup red onion, finely diced1 jalepeno, finely diced1 tsp canola vegetable oil
Directions
Pre-heat oven to 425 degrees F.
Mix dry ingredients. Stir in veggies. Mix wet ingredients. Stir Wet and dry ingredients together with a few swift strokes. Heat cast iron pan in oven with 1 tsp oil. Pour batter into heated pan. Return to oven and bake 25 to 30 minutes.
Makes 12 servings.
