Greek Lemon Chicken Soup

Ingredients
1.5 pounds of boneless skinless chicken cut in bite sized pieces12 cups of Swanson fat free reduced sodium chicken broth5 cups of water1.5 cups of medium grain white rice2 cups of shredded carrotsJuice of 2 lemonsZest of 2 lemons2 large eggs
Directions
Cut chicken into bite size pieces
Put broth in large stock pot, on high heat
Add water and chicken, cook until chicken is cooked, approx. 8 min.
Then add carrots and rice. Place tight fitting lid and reduce heat to medium. Cook for 20 minutes.
In separate bowl add lemon juice, lemon zest and eggs. Beat well.
Then take 1 to 2 cups of the hot broth from the soup and slowly beat it into the egg mixture. Then add the lemon/broth mixture to the soup and cook on medium heat for another 10 minutes.
