1 1/2 cups flour1 1/2 cups whole wheat flour2 tsp baking powder1 tsp baking soda1/3 cup almond meal2 tsp pumpkin pie spice1/4 cup canola oil3 oz chopped dates5 oz raisins2 oz chopped prunes2 oz chopped cashews2 oz chopped walnuts1/2 cup dark brown sugar1/2 cup sugar1/4 cup pureed strawberries1/2 cup 100% fruit juice1/2 cup unsweetened plain almond milk1 tbsp lemon juice
Preheat the oven to 300F, grease a 9" springform pan.
In a small bowl, mix flours, baking powder, baking soda, almond meal and pumpkin pie spice. Set aside.
Heat oil in a pot over medium heat.
Add dates, raisins, prunes, cashews and walnuts. Cook just slightly (about 1 minute), stirring well.
Add sugars, berry puree and fruit juice. Cook until the sugar is dissolved and the mixture is beginning to bubble vigorously.
Remove from heat and cool 2 minutes, then stir in the almond milk, lemon juice and flour mixture.
Pour into the prepared pan and bake 1 hour, until it tests done.
