Country style Chicken Pot Pie

3 chicken breasts1 carrot, thinly sliced1/2 c. chopped green pepper1 tbsp celery seed1/2 onion, chopped1/2 c. broccoli florets, chopped2 c. frozen peas2 tbsp margarine2 c. milk1 tbsp thyme1/2 pkg frozen puff pastry1 egg, beaten
Preheat oven to 400. Cut chicken into bite-size pieces. Prepare veggies. Lightly coat frying pan with oil, and cook chicken til golden. Add carrot, pepper, celery seed, and onion. Stir often til onion begins to soften. Remove chicken & veggies to a bowl. Reduce heat to medium. Melt margarine. Whisk in flour, then gradually add milk til thickened. Add broccoli, peas, thyme and salt. Combine chicken mixture and sauce (it will be thick). Turn into a 2L casserole. Roll out puff pastry to size to cover casserole. Beat egg, brush over pastry topping. Sprinkle with thyme and salt. Bake til golden and bubbley. Let stand 10 min prior to serving.
