Vegetarian Chicken Salad

Ingredients
2 pieces gardein chicken scallopini~15 slices mushrooms1/4 small onion1 6 oz container Greek yoghurt~half a serving egg beaters, scrambled (or 1 egg white)1/2 cup fat-free vegetarian refried beans
Directions

Blend Gardein Chicken, mushrooms, and onion in a blender or food processor. Transfer to a bowl and stir in Greek yoghurt, scrambled egg whites, and refried beans. Season with salt and/or pepper according to your taste preference.
Refrigerate several hours until cold.

Makes 8 1/2 cup servings.
