Tangy Tuna Salad Sandwich

Ingredients
1 eight-inch, whole-wheat baguette or 8 ounces whole-wheat boule1/2 red onion, about 1 cup, thinly sliced1/2 cup reduced-sodium feta cheese, crumbled1/2 English cucumber, about 1 1/2 cups, chopped3 Roma tomatoes, sliced1/4 teaspoon black pepper1 head red leaf lettuce, chopped1/2 cup reduced-sodium tuna, packed in water, drained, 1 tablespoon white wine vinegar1 teaspoon Dijon mustard1 tablespoon olive oil
Directions
Slice the bread in half horizontally, remove about 3/4 cup of the soft inside filling to create a shell. Reserve filling for later use as bread crumbs.

Combine onion, cucumber, tomatoes, and feta into a mixing bowl, toss to combine. Place vinegar and mustard into a small bowl, then whisk in oil to emulsify. Pour dressing over vegetable mixture and season with pepper. Toss to combine.

Layer the bottom half of the bread with lettuce leaves. Fill with vegetable mixture then top with tuna. Press second remaining half of bread over top to sandwich. Wrap tightly with plastic wrap, allow to stand for 10 minutes for flavors to develop and the bread to soak up some of the dressing.

Serve chilled, makes 4 wedges.

    Using 2 slices of whole wheat bread, 1 pouch of tuna (2.6oz), @ 2 tblsp of feta, @ 1/4 c each cucumber and tomato and @ 1 tblsp of onion, and using banana pepper rings and a bit of the liquid from the jar instead of a dressing with oil, I made a whole sandwich, big and filling, for 308 calories. - 2/28/12

    The intro states "I love a good sandwich, one that's so big you have to smash to fit into your mouth" & careful reading of recipe tells you one serving size is 2 INCHES & 1/8 cup tuna... That is NOT a big sandwich. If this is an appetizer it should say so in the intro. - 1/29/13

    Even if it's categorized as an appetizer, this is a tiny portion appetizer that would take up half the calories of your meal (or more). I'm giving it 3 stars just because I love tuna. - 3/1/13

    It sounds good and perhaps you can put it in a whole wheat pita or toasted English muffin. I really like the idea Meredith927 said, using the banana pepper juice. Maybe to make it creamier add a touch of Greek yogurt with the pepper juice and whisk. I'm going to try it... - 4/2/12

    Since I am not a fan of raw onions, I think I would replace them with pepperoncini like in a greek salad. Maybe also use pita bread instead. - 5/3/11
