Turkey Stuffed Cabbage

Ingredients
*Turkey, Ground turkey, 93% lean, 16 oz Carrots, raw, .75 cup, chopped Eggplant, 2 cup ChoppedOnions, raw, 1 cup, choppedGarlic, 3 clove Tomato Paste, 1 can (6 oz) Organic Diced Tomatoes, 3 cup Red Wine, 4 fl oz kitchen basic chicken stock, 2 serving *Brown Rice, long grain, .5 cup (cooked)Olive Oil, 1 tbsp Cabbage, fresh, 1 head, large (about 7" dia)
Directions
1) Soak cabbage leaves in hot water for 10 minutes, or just until softened. Remove.
Drain. Cool.
2) Saute Onions, Carrots, Eggplant, Garlic, in Olive oil with Italian Spices. Add 1 cup soft chopped cabbage(from heart of the cabbage). Let mixture cool.
3) Combine cooled rice, vegetable mixture and ground turkey.
4) Stuff approximately 12 to 13 cabbage leave tightly(about 1/3C per leaf).
5)Mix dices tomato, tomato paste, 4oz red wine.

In a large oven safe cast iron pot( Like a Le' Creuset).
Add remaining chopped cabbage from the cabbage heart to bottom of pot. The begin to layering and alternate tomato mixture into the pot. Place any remaining leave on top. then cover pot with cast iron cover.

Place pot in a 250 degree oven for 4 to 6 hours.

Approximately 2 stuffed cabbages per person.
