Mini Meatless Enchilada Casserola

Ingredients
*Fat Free Refried Beans - Fat Free, 1 can *Sliced Mushrooms, 4oz can, drained and rinsed. *Sliced Black Olives, 4oz can, drained and rinsed*Beans, black, 0.3can, drained and rinsed.*Low Sodium Taco Seasoning, 1tsp*Ground Cumin, 1/8 tsp*Half an onion, chopped or diced.*Low Carb Tortillas, 8", 2 *Top with favorite Mexi-fixins!
Directions
*Tenderize onion over medium heat. Reduce to low and mix in everything but the tortillas.
*In a very 1qt baking dish, coat with cooking spray and set a tortilla inside. Spread a layer of enchilada mixture. Lay another tortilla, and another layer of mix.
*Cover and bake at 400F for 10 minutes, then uncover and bake another 5.
