Jam Cake

Ingredients
3/4 c shortening1 c sugar3 eggs1 c blackberry jam (seedless)3/4 c buttermilk1 tsp soda2.5 c flour1 tsp each of nutmeg, cinnamon, allspice1/2 tsp cloves, ground1/2 salt1 c raisins1/2 c port wine*add more flour by TBS if necessaryIcing ingredients4 c sugar1 c milk1/2 c butter
Directions
Cream shortening and sugar together. Add egss and jam. Disolve soda in buttermilk, sift flour and spice together. Add flour mixture and buttermilk alternating. Fold in raisins and wine. Add more flour to correct consistency. Bake in bunt or loaf pans at 300-325 for about an hour.

Caramel Icing for Cake
Caramelize 1 cup sugar in an iron skillet. Boil 3 cups of sugar with milk. Add caramelized mixture and butter. Cook to soft ball stage. Beat till cool and right consistency to spread. If too thick, add a small amount of milk to thin.
