Homemade Burrito Bowls

Ingredients
1 can low sodium black beans1 can green chiles1/2 pound chicken breast2 bell peppers1 small onion1 tsp. extra virgin olive oil2 cups brown rice1.5 cups lettuce
Directions
In a tsp. of EVOO, fry the peppers and onions.

Prepare 2 cups minute brown rice in separate pot.

Combine black beans and green chiles in a pot, heat, pour off liquid.

Bake, grill, broil, or use any other method of preparing your chicken breast and then slice into strips.

Combine beans/chiles, rice, peppers/onions, and chicken in a large bowl. Stir. Add fresh chopped lettuce.

Feel free to add salsa, guacamole, low-fat sour cream or cheese to taste...but remember, those are not factored into the nutrition info on this recipe.
