* Garlic, 3 clove (remove) * Onions, raw, 1 cup, chopped (remove) * *Squash, winter, acorn, raw, 1.5 cup, cubes (remove) * *Yams, 1.5 cup, cubes (remove) * Carrots, raw, 2 cup, chopped (remove) * thai red curry - package, 50 gram(s) (brand: Asian Home Gourmet) * coconut cream powder - package, 50 gram(s) (brand: Asian Home Gourmet) * Lentils, 1 cup (remove) (I'm using red lentils) * Chicken Broth, 8 cup (8 fl oz) (low sodium preferred) * *Extra Light Olive Oil, 1 tbsp (remove)
Saute garlic and onion in oil. Add veggetables, chopped in pieces. Add red curry package and lentils. Stir. Add broth. Bring to boil. Simmer for 45minutes or until vegetables and lentils are soft. Add one cup lukewarm water to coconut cream powder. Stir into soup. Blend.
