Homemade Milk-Free Vanilla Pudding

Ingredients
5 eggs5 tbsp sugar500 mL Rice milk 1 tsp of Vanilla extract (or to taste)
Directions
Blend all ingredients together well. Put in a pan, and put the pan in a water bath on medium heat. Simmer for 45 minutes or more, until brown on the top.

May need to allow to cool off before completely hardens.

Makes 4 servings.
