6 c. hot water2 c. 9-grain cracked cereal1/3 c. millet, raw or cooked1 c. sunflower seeds1/3 c. sesame seeds2/3 c. honey1/3 c. oil1/3 c. applesauce2 tbsp salt3 tbsp yeast, instant1 c. gluten flour11 cups (approx) whole wheat flour
Combine first 9 ingredients and let soak for a few minutes. Add gluten flour, yeast and enough whole wheat flour until dough pulls away from side of bowl. Knead for 10 minutes and bake at 350 degrees approximately 45 minutes. This recipe also makes wonderful dinner rolls.
At higher altitudes, after baking 45 minutes, cover with foil and bake additional 20 minutes.
