Fancy Grilled Cheese

Ingredients
2 slices olive artisan bread or other artisan bread of your choice (slices no bigger than an index card), sliced about .5" thick1 oz swiss cheese, sliced (make sure you get rennetless cheese to keep it vegetarian)1-2 shallots, sliced2 tbsp extra virgin olive oil
Directions
1. Sautee sliced shallots over medium heat in 1 tbsp extra virgin olive oil until just brown.
2. Drizzle one side of each piece of bread with 1 tbsp (total) extra virgin olive oil.
3. Lay cheese and shallots evenly over dry side of one piece of bread, top with dry side of other piece.
4. Grill sandwich in a skillet or panini press until cheese is melted and bread is slightly browned.

Makes 1 sandwich

    Hi, I haven't made this exact recipe but I have made a version of it. I used regular cheese but sliced thin and just a little of it. I enjoy it a lot. - 10/2/07
