Low Carb & Slimming Chocolate Chip Cookies!!

1/4 cup soy flour1/2 cup whole wheat flour1 1/2 cups unflavored whey protein isolate **(you can buy this at Netrition.com or any health food store. It is finer than regular protein powder, acts like flour!!)1 tsp baking powder1 tsp baking soda1/2 tsp salt1/2 cup pumpkin puree1 stick I can't believe it's not butter baking stick (or any light butter or regular butter of your choice)1/4 cup plus 2 TBspns White Sugar Splenda Blend1/4 cup plus 2 TBspns Brown Sugar Splenda Blend6 Tbs egg whites (approx 2 eggs)1 Tbs vanilla extract3/4 cup mini chocolate chips, low sugar or sugar free preferred. Can also look for carob chips1/4 cup finely chopped walnuts (optional, but these are a source of good fat, filling and are a "clean food". Highly recommended to optimize nutrition)- not calculated in calorie count**
Mix dry ingredients in sep. bowl. Mix pumpkin, slightly softened butter and both sugars in bowl and mix. Add egg whites and then vanilla. Add dry ingredients to wet mixture. Add chips and nuts . Drop in small spoonfuls on ungreased cookie sheet, bake at 350 for 10-12 minutes.
Makes about 55 cookies.
You can play around with whey powder and wheat/ soy flour combos but this is the best I have found so far to get carbs low. Sugar free or low sugar chocolate chips would make the recipe even lower in carbs, I just didn't have them on hand this time. This combo has about 50 cals a cookie and 5 carbs per cookie which is really good!
