Black Bean Confetti Salad

Ingredients
2 15-oz cans black beans, drained and rinsed4 bell peppers, assorted colors, chopped1 medium white onion, chopped3 tablespoons olive oil1 tsp ground cumin1/2 tsp honey3/4 tsp salt1/8 tsp cayenne (more if you want a spicier dressing)Juice of 1 lime
Directions
Mix beans, bell peppers and white onion in a large bowl. In a separate, smaller bowl, whisk remaining ingredients into a vinaigrette. Ideally, you’ll have a 1/2 cup of dressing. Pour it over the bean mixture, toss it well and adjust seasonings to taste.
